Thaw the frozen cherries on medium power level in the microwave. (I usually run it for 2.5 minute intervals, stirring in between, and it takes 7.5 to 10 minutes to thaw completely.)
Put all the other ingredients in blender. Blend slowly at first and then increase the speed until the pudding is nice and smooth.
Serve pudding topped with cherries.
Notes
I modified this recipe for anyone on 6FED (Six Food Elimination Diet), but we typically use 1 1/2 cups of cashews or blanched almonds with 1 3/4 cups of water in place of the coconut milk.
