Chocolate Pudding

Yes, this can be dessert. Yes, we make it for breakfast sometimes. Don’t judge us…it’s still pretty healthy. 🙂 And it happens to be one of my husband’s favourites, so it comes around every week or two.

Chocolate Pudding

Ingredients

Topping

  • 4 cups frozen cherries (Costco)

Pudding

  • 1 can coconut milk (400 mL, Costco)
  • 2 avocados
  • 4 bananas
  • ½ cup cacao powder
  • cup honey
  • 1 tbsp vanilla extract (Costco)

Instructions

  • Thaw the frozen cherries on medium power level in the microwave. (I usually run it for 2.5 minute intervals, stirring in between, and it takes 7.5 to 10 minutes to thaw completely.)
  • Put all the other ingredients in blender. Blend slowly at first and then increase the speed until the pudding is nice and smooth.
  • Serve pudding topped with cherries.

Notes

I modified this recipe for anyone on 6FED (Six Food Elimination Diet), but we typically use 1 1/2 cups of cashews or blanched almonds with 1 3/4 cups of water in place of the coconut milk.

    • Hi Naomi, I’m so glad you love this recipe! I also love that it’s quick to make! I would add two extra bananas in place of the two avocados. In fact, I’ve done this when I happen to be out of avocados! It won’t be quite as rich as with the avocados but it will be a touch sweeter. Hope that works for Sam!
