Plantain-Crust Pizza
I based the crust of this pizza off of the Paleo Mom’s plantain pancakes, adjusting the recipe to make it savory for pizza. My husband says this is the only pizza that makes him feel good on the inside after eating it. Delicious!
Plantain-Crust Pizza
Pizza that makes you feel good on the inside!
Servings: 2 pizzas
Ingredients
Crust
- 4 plantain (mostly green ripeness is best) (Superstore)
- 8 large eggs
- 6 tbsp extra virgin olive oil (Costco)
- ½ tsp sea salt (Costco)
- 1 tsp baking soda
Sauce
- 156 mL can tomato paste (Costco)
- 2 tbsp extra virgin olive oil (Costco)
- ¼ tsp sea salt (Costco)
- ¼ tsp garlic powder
- ⅛ tsp oregano, dried
- ⅛ tsp basil, dried
- pepper, to taste
Toppings – Hawaiian
- ½ yellow onion
- ½ pound deli ham (no sugar, no nitrites) (Broek Pork)
- ¼ pound mushrooms, sliced (Superstore)
- 1 can pineapple, chopped (Community Natural Foods)
- 200 g cheddar cheese (Superstore)
Toppings – Pepperoni
- ½ yellow onion
- 1 pepper, chopped
- ¼ pound mushrooms, sliced
- ½ pound pepperoni, sliced (Old Country Sausage Shop, Sunworks, Broek Pork)
- 200 g cheddar Cheese (Superstore)
Instructions
- Prepare toppings (wash, slice, chop).
- Blend all ingredients for crust in blender.
- Divide crust batter between two pizza pans lined with parchment paper. Spread batter with spatula to even out.
- Bake at 375°F convection for 10-15 minutes, or until top is firm enough to spread sauce on. While crust is baking, whisk together ingredients for sauce.
- Remove crusts from oven and spread sauce onto partially baked pizza crusts.
- Add toppings.
- Bake at 400°F convection for another 15-20 minutes.
- Let rest a few minutes before serving and enjoying!
