Strawberry Rhubarb Compote

This compote goes well with chia pudding. Did you know that rhubarb is a vegetable?!?! I love to sneak vegetables into dishes! Again, this is a recipe that we use for breakfast, but it could also be served with ice cream (coconut milk ice cream if you are off of dairy) and it would make a wonderful dessert.

Strawberry Rhubarb Compote

Ingredients

  • 2 tbsp butter or coconut oil
  • 4 cups rhubarb (thawed if frozen)
  • 8 cups strawberries (thawed if frozen)
  • 1-2 tbsp honey (to taste)

Instructions

  • Melt butter in larger saucepan over medium heat.
  • Add rhubarb and cook about 10-15 minutes until soft.
  • Add strawberries and cook another 5 minutes until the strawberries are soft.
  • Add honey to taste.
  • Enjoy!
